ALMOND
DATE BISCUITS RECIPE
Almond Date Biscuits are one
of my favourites as I really love anything with dates in them.
My trouble is that when I start eating the Almond Date Biscuits
it is very hard to stop at one biscuit. My husband likes to
have a cup of tea before he goes to bed at night and he really
likes to have one or two of the Almond Date Biscuits with
it. I am sure if you make these biscuits your whole family
will enjoy them.

Date Biscuits Ingredients
1/2 lb dates
2 Tbs water
1 tsp grated orange rind
1 cup plain flour
4 oz butter
1/3 cup sugar
1 egg yolk
1/2 tsp vanilla essence
pinch of salt

Date Biscuits Method
In a saucepan
add the chopped dates, water and grated orange rind. Put the
saucepan on the oven plate and simmer for 5 minutes or until
the dates are soft, keep stirring well while simmering. When
done mash to a pulp and place it in a bowl to cool. In a large
bowl put sugar, and butter and cream it. Then add egg yolk
and the vanilla and beat well. Now add the salt and flour
and chill for 1 hour. Try the mixture and if it is to soft
to handle add more flour, it should only need 1 extra tablespoon
if that.
Take spoonfulls of dough and make into balls 1 inch in diameter.
Grease a tray and place each biscuit 2 inches apart on it.
With your thumb make a hole in the top and bake the Almond
Date Biscuits in a slow oven 300 degrees for 25 to 30 minutes.
Take out of the oven and put them on a wire rack to cool slightly.
Fill the hole in the middle with a little bit of date mixture
and top with a split almond. I also just do plain ones without
the hole in the top.
