APPLE
CAKE RECIPE
Apple Cake is a wonderful tasting
cake which is good with a cuppa. The taste of apples, raisins,
cinnamon and cloves is just sensational. Years ago when people
went to each others house for morning tea there was always
a cake, it didn't have to be a fancy one just a plain butter
cake or this Apple Cake. My dear old mum used to love making
this Apple Cake.

Cake Ingredients
1 x 20 oz can unsweetened peeled,
sliced apples
1/2 cup raisins
1/2 cup frozen apple juice concentrate
2 egg whites beaten until stiff peaks form
1 l/4 cup whole wheat pastry flour
3/4 cup regular rolled oats
1/4 tsp cloves
1 tsp baking soda
1 tsp cinnamon

Cake Method
In a large
bowl add the raisins, apple juice and apples and stir together.
After doing that you mix together all the dry ingredients
and then add them to the apple mixture. Gently fold in the
beaten egg whites. Using a 9 inch round non stick cake pan
turn the batter into it and bake in a 350 degree oven for
1 1/4 hours. Remove from oven and cover the Apple Cake with
aluminium foil and cool for 10 minutes like this before turning
the cake out of the pan. It is really great served with a
dab of whipped cream.
