APRICOT
CUSTARD TART RECIPE
This recipe
will teach you how to make Apricot Custard Tart. It is a quick
and easy recipe to make. This tart just doesn't taste good
but looks good to and what a wonderful mixture of custard
and apricot when you bite into it. My husband really loves
it when I make the Apricot Custard Tart as he loves his fruit
and custard. Before serving whip some cream and put a dollop
of cream with each serving.

Custard Tart Ingredients
6 oz shortcrust pastry
2 eggs
3 Tbs castor sugar
2 Tbs flour
1/4 pint plus 5 Tbs milk
few drops vanilla essence
For the topping:
! 1/2 x 15 oz cans apricot halves
For the glaze:
1 1/2 tsp arrowroot
1/4 pint fruit juice
1 Tbs apricot brandy

Custard Tart Method
First thing line an 8 inch shallow
fluted flan tin with pastry and fill it with greaseproof paper
and rice and bake it in a hot oven for 25 minutes then remove
the paper and rice and bake it for a further 5 minutes to
dry base of the flan case then leave it to cool. Mix the eggs
and sugar together for confectioners custard then add flour
and sufficient milk to make a smooth paste. Boil the rest
of the milk and add to the eggs stirring.
Return to pan and simmer 2 to 3 minutes until thick then remove
from heat making sure to stir frequently while it is cooling
so a skin does not form. Stir in the vanilla essence and spread
custard in the base of flan case. Drain the fruit and arrange
on the top of the custard. In a saucepan put the arrowroot
and blend in the fruit juice then bring to the boil and simmer
until thick then stir in the apricot brandy. Spoon the glaze
over the fruit and leave to set. Serve the Apricot Custard
Tart with whipped cream.
