ASPARAGUS
AND CHICKEN CASSEROLE RECIPE
This recipe
will teach you how to make Asparagus and Chicken Casserole.
It is a quick and easy recipe to make. This
is a wonderful meal to make as you can have the Asparagus
and Chicken Casserole served with new boiled potatoes or a
great big tossed salad it goes well with either one. My family
like having it with the salad in summer but once the cooler
weather comes I boil a great big pot of new potatoes to go
with it.
Asparagus
and Chicken Casserole Ingredients
1 egg
1 tsp salt
2 cups milk
2 oz butter
1 Tbs plain flour
2 Tbs breadcrumbs
pinch cayenne pepper
1 can asparagus spears
1 Tbs chopped capsicum
2 cups diced cooked chicken
Asparagus
and Chicken Casserole Method
In a saucepan melt 1 ounce butter
and add the flour, salt and pepper and stir until smooth then
cook for 2 minutes without browning then add the milk and
stir until the sauce boils and thickens. Put the egg into
a bowl and beat it then pour the sauce onto the egg and blend
thoroughly and then return the sauce to the saucepan. Add
the chicken and capsicum to the sauce and stir until boiling.
Drain the asparagus and cut the spears into 2 inch lengths
and fold it into the sauce to. Turn the mixture into a lightly
greased casserole and sprinkle the top with the breadcrumbs
then dot with remaining butter. Bake the Asparagus and Chicken
Casserole in a moderate 350 degree oven until the sauce bubbles
and the crumbs are brown.

CHICKEN
MOULDS RECIPE
This
recipe will teach you how to make Chicken Moulds. It is a
quick and easy recipe to make. These
Chicken Moulds have the wonderful flavour of mayonnaise, chicken,
celery, green olives, lemon juice, paprika, cucumber, onion,
pimento, salt and cream mixed together with the gelatine and
water to make a great mould. I like to decorate the Chicken
Moulds with olive slices and pieces of pimento.
Chicken Moulds Ingredients
1/2 tsp
salt
1 Tbs gelatine
1/4 tsp paprika
1 Tbs lemon juice
1 cup mayonnaise
1/2 cup cold water
3 dsp minced onion
1 cup whipped cream
1 dsp minced pimento
1/3 cup chopped celery
1/2 cup chopped cucumber
3 dsp chopped green olives
1 1/2 cups diced cooked chicken
Chicken
Moulds Method
First thing to do is to soften
the gelatine in the water and dissolve over boiling water
then stir into the mayonnaise. Add the remaining ingredients
to this mixture with the exception of the cream. Stir thoroughly
then mix in the whipped cream. Divide the mixture between
eight individual moulds and chill until firm. Unmould to serve
then decorate the Chicken Moulds with olive slices and pieces
of pimento.
