ASPARAGUS
ROLL UPS RECIPE
This recipe
will teach you how to make Asparagus Roll Ups. It is a quick
and easy recipe to make. My daughters and grandchildren would
never eat asparagus until one day I made some Asparagus Roll
Ups and made a dip to go with them and I also put a little
bowl of tomato sauce with them and guess what they were all
eaten. I often make the Asparsgus Roll Ups when I am having
friends over for dinner just as an appetizer before the main
course.

Roll Ups Ingredients
125g butter melted
250g cream cheese
1/2 tsp prepared hot mustard
28 prepared asparagus spears
100g sliced ham finely chopped
14 slices thin wholemeal bread crusts removed

Roll Ups Method
Preheat oven to 200 degrees.
Steam the asparagus until just tender then run them under
cold running water to refresh them and drain well then set
aside. Using a rolling pin flatten each slice bread then mix
together cream cheese, mustard and ham and spread over each
slice bread. Arrange 2 asparagus spears on each bread slice
with tips toward outside edges then roll up and cut each roll
in half and secure with a toothpick. On a lined baking tray
place the roll seam down then brush with butter and bake the
Asparagus Roll Ups for 15 minutes or until lightly browned.

TUNA
PATE RECIPE
This
recipe will teach you how to make Tuna Pate. It is a quick
and easy recipe to make. Pate
is a wonderful thing to have made when you are having a party
as it goes so well with crackers or melba toast. My visitors
really enjoy the Tuna Pate with crackers and a drink before
they have the main meal. I usually make the Tuna Pate up for
my family when we get together for a night in front of the
television and I get their favourite crackers in to have with
the Tuna Pate I prefer the melba toast but whatever you have
it with it taste really magnificent.
Tuna Pate Ingredients
1
tsp lemon juice
250ml tomato juice
3 Tbs natural yogurt
1 tsp horseradish relish
1 tsp grated lemon rind
1 Tbs chopped fresh dill
freshly ground black pepper
2 tsp finely chopped capers
220g canned tuna drained and flaked
5 tsp gelatine dissolved in 125ml hot water
1 small cucumber peeled, seeded and chopped
Tuna Pate
Method
In
a blender place tuna, cucumber, tomato juice, gelatine mixture,
dill, lemon rind, lemon juice, capers, relish and yogurt and
blend until smooth then season to taste with black pepper.
Spoon the tuna mixture into four individual dishes and refrigerate
until firm. Serve the Tuna Pate with crackers or melba toast.
