BEEF
LAYER LOAF RECIPE
When I make the Beef Layer
Loaf I usually make two and freeze one for another day. My
husband loves his Beef Layer Loaf with mashed potatoes and
peas, but he also likes taking the Beef Layer Loaf on his
sandwiches the next day to work. It is a loaf that is easy
to make and very economical.
Beef Layer
Loaf Ingredients
1 egg
rosemary
1 rasher bacon
2 spring onions
salt and pepper
1 1/2 lb beef steak
1 cup breadcrumbs
1 Tbs butter melted
1/4 cup breadcrumbs
2 Tbs onion chopped
1 cup peeled tomatoes diced
Beef Layer
Loaf Method
Combine the minced steak, diced
bacon, chopped onion, salt, pepper and rosemary to taste.
Bind with a little beaten egg. Line a loaf tin with greased
foil then sprinkle the inside with the 1/4 cup breadcrumbs.
Press half the meat mixture into this tin. Then in a medium
bowl mix the breadcrumbs, melted butter, diced tomatoes, chopped
spring onions, season with salt and pepper. Spoon this mixture
over the meat layer in the tin and then cover it with remainder
of the meat mixture, then take some foil and cover the tin.
Bake the Beef Layer Loaf at 350 degrees for 1 1/4 hours. Leave
the Beef Layer Loaf in the tin for about 10 minutes before
turning out. I sometimes put some cheese down the middle to
melt when I have turned it out but that is up to you if you
desire. Serve hot with vegetables or cold with salad.
