BEEF
OLIVES RECIPE
You would expect olives to
be in Beef Olives but they are not. They are called Beef Olives
because you roll them up like the shape of olives. My family
really like Beef Olives with mash potatoes and peas. I like
making this recipe when my daughter and grand children are
coming over for dinner as they love Beef Olives.
Beef Olives
Ingredients
1 egg
1 tsp salt
2 cups water
1/2 tsp thyme
1/4 tsp pepper
1/2 tsp marjoram
3 Tbs breadcrumbs
1 tsp chopped suet
few drops lemon juice
1 dsp chopped parsley
1 1/2 lb stewing steak
1 dsp plain flour blended with a little cold water
Beef Olives
Method
First thing to do is to prepare the steak
by cutting it into pieces about 4 inches square. Mix the breadcrumbs
with the suet, salt, pepper, thyme, marjoram, lemon juice,
and parsley, and then bind it with the egg this mixture makes
the stuffing. Place a portion of the stuffing on each piece
of steak and roll up and tie firmly with fine white string.
Heat a little fat in a saucepan and brown the rolls on all
sides. Pour away the fat and add the water. Cover and simmer
for about 2 hours or until the meat is tender. After you have
done this add the blended flour to the saucepan to provide
a thickening for the gravy and stir until boiling and then
cook for about 5 minutes. Lift out the Beef Olives and remove
the string and return them to the gravy to reheat before serving.
This is great served with mashed potatoes and peas.
