BEEF
STROGANOFF RECIPE
You will really love this recipe
for Beef Stroganoff, the flavours are great. I really like
mushrooms so I always add a few extra to my Beef Stroganoff.
This is a very creamy Beef Stroganoff, if you don't like that
much cream just add a little less. I'm sure if you make this
recipe it will become one of your favourites.
Beef Stroganoff
Ingredients
1 tsp salt
4 Tbs butter
2 cups stock
3 Tbs sherry
2 cloves garlic
1/2 cup cream
4 Tbs plain flour
2 lb buttock steak
2 dsp tomato paste
1 cup finely chopped onion
1 1/2 cups thinly sliced mushrooms
Beef Stroganoff
Method
Cut the meat into 1/4 inch
slices. Melt 2 tablespoons of the butter in a pan. Combine
1 tablespoon of the flour with the salt and cover the meat
with this mixture then lightly fry till brown. Add the mushrooms,
onion and crushed garlic and cook for 4 minutes or until the
onion is barely tender. Remove the meat mixture from the pan.
Add the remaining butter to the pan and when melted stir in
the rest of the flour and add the tomato paste and gradually
stir in the stock and cook stirring constantly until the sauce
boils and thickens. Add the meat and mushroom mixture to the
sauce and cover and cook over low heat until the meat is tender
about 1 hour. Just before serving the Beef Stroganoff stir
in the cream and sherry and heat thoroughly without boiling.
Serve with freshly cooked clever rice.
