BOILED CARROT CAKE RECIPE

This recipe will teach you how to make Boiled Carrot Cake. It is a quick and easy recipe to make. You can make the Boiled Carrot Cake in a loaf pan or a round cake tin either way it still taste the same. They call it a Boiled Carrot Cake as you boil the ingredients. The cake is great served with a little butter spread on it or you can have a dab of cream. Which ever you prefer.

Boiled Carrot Cake Ingredients

30g butter
3/4 cup water
3/4 cup plain flour
1/2 tsp bicarb soda
1 cup carrot grated
3/4 cup castor sugar
1/2 tsp ground nutmeg
3/4 cup self raising flour
3/4 cup raisins chopped
1/2 tsp ground cinnamon
1/2 cup walnuts chopped

Boiled Carrot Cake Method

Grease a 14cm x 21cm loaf pan and line base and sides with greased paper. Combine carrot, raisins, water, sugar, butter, cinnamon and nutmeg in saucepan and stir constantly over heat without boiling until sugar is dissolved. Bring to the boil, reduce heat and cover, simmer 10 minutes and cool to room temperature. Stir half the sifted flours and soda into cold mixture and then add remaining flours and walnuts. Spread into prepared pan. Bake the Boiled Carrot Cake in moderately slow oven for about 1 hour. Stand 5 minutes before turning onto wire rack to cool. Serve the Boiled Carrot Cake with butter.
