The recipe for Butterfly Cakes has been passed down from one generation to the next. My grandmother use to cook Butterfly Cakes and my mother made them then I did and now my children and grandchildren are making Butterfly Cakes.

Butterfly Cakes Ingredients

4 eggs
1/2 cup milk
1 Tbs castor sugar
1 cup castor sugar
1/2 tsp bicarb soda
120g butter chopped
2 tsp vanilla essence
2 cups self raising flour
300 ml thickened cream

Butterfly Cakes Method

First thing to do preheat the oven to 210 degrees and line 2 trays of 12 patty cake pans with paper cases. Place butter, flour, bicarb soda, sugar, eggs, milk and vanilla into a bowl and beat for 2 minutes. Spoon this mixture into the paper cases and bake for 20 minutes or until when a skewer inserted in the middle comes out clean. Beat cream and sugar until stiff peaks form. Remove a small section from the middle of the Butterfly Cakes and cut in half to make the wings. Fill the Butterfly Cakes with a little cream and top with the wings. Dust with icing sugar to serve.
