CASHEW
CHICKEN RECIPE
This recipe
will teach you how to make Cashew Chicken. It is a quick and
easy recipe to make. My
favourite nuts are cashews and my favourite meat is chicken
so add them together and you get Cashew Chicken. when you
add your chicken and cashews with the other ingredients you
have an aroma that fills your house that tells your family
they are having Cashew Chicken for dinner.

Chicken Ingredients
1/2 tsp
salt
1/2 tsp sugar
4 Tbs salad oil
4 green onions
2 Tbs corn starch
1/2 lb mushrooms
1/4 cup soy sauce
1 cup chicken broth
1 packet cashew nuts
1/2 lb chinese pea pods
2 cups bamboo shoots drained
3 chicken breasts boned and skinned

Chicken Method
First thing to do is to slice
the chicken breasts horizontally into very thin slices and
cut into one inch squares then place the chicken on a tray.
Prepare vegetables removing ends and strings from pea pods,
slicing mushrooms, green part of onions, and the bamboo shoots
and add to the tray with the chicken. Mix soy sauce, cornstarch,
sugar and salt. Heat 1 tablespoon of oil in a skillet over
moderate heat and add all the nuts and cook 1 minute shaking
the pan toasting the nuts lightly then remove and keep to
one side. Pour remaining oil in fring pan and fry the chicken
quickly turning often until it looks golden then lower heat
to low. Add pea pods, mushrooms and broth. Cover and cook
slowly for 2 minutes. Remove cover and add the soy sauce mixture
and bamboo shoots and cook the Cashew Chicken until thickened
stirring constantly. Simmer the Cashew Chicken uncovered a
bit more and add green onions and nuts and serve immediately.
