CHICKEN
AND POTATO SALAD RECIPE
This recipe
will teach you how to make Chicken and Potato Salad. It is
a quick and easy recipe to make. This is my husbands favourite
barbecue recipe as he loves his chicken and he always has
to have potatoes with a meal so this Chicken and Potato Salad
is excellent to make for him. The flavours of this recipe
is really exceptional.
Chicken
and Potato Salad Ingredients
1 tsp pepper
5 slices pancetta
2 Tbs lemon juice
1/4 cup sour cream
1/4 cup mayonnaise
2 Tbs french dressing
1/2 cup chopped basil
4 chicken thigh cutlets
2 cloves crushed garlic
500g tiny new potatoes halved
2 Tbs drained green peppercorns chopped coarsely
Chicken
and Potato Salad Method
Combine chicken, garlic, juice,
pepper, and half the basil in a medium bowl then toss and
coat the chicken all over in the marinade. Cook chicken in
batches on a heated oiled barbecue brushing occasionally with
marinade until browned and cooked through then cover and keep
warm. Cook pancetta on the heated oiled barbecue about 1 minute
until crisp then chop coarsely. Meanwhile steam potatoes until
just tender then divide the potatoes among serving plates
and drizzle with combined sour cream, mayonnaise, peppercorns,
dressing, remaining basil and pancetta. Serve Chicken and
Potato Salad with a lovely bottle of wine.
