CHICKEN
CACCIATORE RECIPE
This recipe
will teach you how to make Chicken Cacciatore. It is a quick
and easy recipe to make. This
recipe has the wonderful flavours of chicken, onion, capsicum,
garlic, tomatoes and white wine mixed together with the rest
of the ingredients makes the Chicken Cacciatore taste really
exceptional. My children like to come home when they know
I am making this dish up as they really enjoy it.
Chicken
Cacciatore Ingredients
1 bay leaf
1 1/2 tsp salt
1/4 tsp thyme
1/4 tsp pepper
1/4 tsp allspice
3 dsp cooking oil
1 roasting chicken
pinch cayene pepper
2 Tbs seasoned flour
1/2 cup onion minced
1 clove garlic crushed
1/4 cup chicken stock
1/4 cup dry white wine
1 3/4 cups tomatoes quartered
1/2 cup green capsicum minced

Cacciatore Method
Cut the chicken into pieces
and roll in the seasoned flour then heat the oil in a pan
and fry the chicken until lightly browned on all sides and
lift out and keep hot. Place the onion, capsicum and crushed
garlic in the pan and cook until lightly browned and then
add the tomatoes, wine, stock, salt, pepper, allspice, bayleaf,
thyme and cayene pepper and stir until boiling. Transfer the
chicken and all other ingredients to a casserole dish. Cover
and cook in a moderate oven 350 degrees till chicken is tender.
Serve the Chicken Cacciatore over bed of noodles.

CHICKEN
ENCHILADAS RECIPE
This
recipe will teach you how to make Chicken Enchiladas. It is
a quick and easy recipe to make.
The flavours of onion, garlic, coriander, pepper, sour cream,
chicken broth, jalapeno peppers, cheese and cooked chicken
wrapped in tortillas makes this recipe taste so exceptional.
My whole family love it when I make up a big lot of the Chicken
Enchiladas. And it is a good meal to serve when your family
is a big one like mine. I like to serve the Chicken Enchiladas
with a big tossed salad.
Chicken Enchiladas Ingredients
1/4
tsp pepper
2 Tbs margarine
8 oz sour cream
8 x 6 inch tortillas
chopped tomatoes
2 cups chicken broth
3 Tbs all purpose flour
4 cloves garlic minced
1 tsp ground coriander
2 cups cooked chicken
1/2 cup onions chopped
1 cup monterey jack cheese shredded
2 jalapeno peppers seeded and chopped

Enchiladas Method
Wrap torillas in foil then
heat in a 350 degree oven for 10 minutes or until softened.
For the sauce add to a saucepan onion, garlic, coriander and
pepper and saute in margarine until onion is tender. Stir
flour into sour cream and add to onion mixture then stir in
broth and chili peppers all at once. Cook and stir until thickened
and bubbly. Remove from heat and stir in 1/2 cup of cheese.
For the filling stir 1/2 cup of the sauce into the chicken
and place about 3/4 cup filling on top of each tortilla and
roll up. Arrange rolls seam side down in a lightly greased
12 x 7 inch baking dish. Top with remaining sauce. Bake covered
in a 350 degree oven for about 35 minutes or until heated
through. Sprinkle the Chicken Enchiladas with remaining cheese.
Bake uncovered for about 5 minutes more or until cheese melts
then let stand for 10 minutes before serving the Chicken Enchiladas.
