CHICKEN
AND BROCCOLI WITH RICE RECIPE

Chicken
and Broccoli with Rice Ingredients
2 Tbs oil
1/2 can milk
1 1/2 cups water
2 Tbs pimento chopped
1 1/2 cups broccoli cuts
2 Tbs dijon style mustard
1/2 cup cheddar cheese grated
1 1/2 cups quick cooking long grain rice
1 x 10 3/4 oz can cream of chicken soup
1 lb chicken breasts boned and cut into strips
Chicken
and Broccoli with Rice Method
In a large saucepan bring the
water to a boil then stir in the rice. Cover and remove from
heat then let it stand for 5 minutes. Meanwhile in a frying
pan cook and stir chicken in hot oil until lightly browned.
Stir in soup, milk, mustard and cheese then add broccoli and
pimento and bring to a the boil. Reduce heat and simmer for
2 minutes then pour over the rice. Serve the Chicken and Broccoli
with Rice with a great glass of wine.

AND MUSHROOMS WITH MUSTARD SAUCE RECIPE
This

smooth blend of herbs and cheeses mixed with the other ingredients

Chicken and Mushrooms with Mustard Sauce Ingredients
4 Tbs
olive oil
2 tsp mustard
1/2 cup cream
1 tsp lemon juice
1 Tbs olive oil, extra
1/2 tsp ground cumin
3/4 tsp ground tumeric
salt and pepper to taste
3 Tbs grated tasty cheese
3 cups mixed lettuce leaves
3 Tbs grated parmesan cheese
20 button mushrooms quartered
4 breast chicken fillets, skin off, cut into strips
Chicken
and Mushrooms with Mustard Sauce Method
Heat olive oil in a large wok
then add chicken and stir fry then add tumeric and seasoning
and continue to stir fry until chicken is golden brown then
remove from wok. Add mushrooms to the wok and stir fry until
soft and well cooked then add chicken and lemon juice. Stir
fry a further minute. Gently heat cream, mustard and cheeses
until all cheese is melted. Divide lettuce between four plates
and top with chicken and mushroom mixture and pour over sauce.
Serve the Chicken and Mushrooms with Mustard Sauce with boiled
potatoes.
