CHICKEN
VELVET RECIPE
This recipe
will teach you how to make Chicken Velvet. It is a quick and
easy recipe to make. This is a really wonderful recipe to
make the flavours of the chicken, ham, snow peas and chicken
stock mixed with the rest of the ingredients goes into making
this wonderful asian style recipe.
Chicken
Velvet Ingredients
1 1/2 tsp oil
2 Tbs cornstarch
4 cups oil for deep frying
1 1/2 cups cold chicken stock
3 egg whites beaten slightly stiff
2 oz snow peas, strings removed
2 Tbs cooked virginia ham minced
2 chicken breasts boned and skinned
1 Tbs cornstarch dissolved in 2 tablespoons water

Velvet Method
Chop chicken very fine and
soak in 1/2 cup of cold stock and then add 1 teaspoon of salt
and 1 tablespoon of cornstarch to chicken and mix well. Fold
beaten egg whites into chicken mixture and also mix 1 tablespoon
cornstarch into the chicken mixture folding lightly. Heat
oil and deep fry chicken mixture and stir quickly with chopsticks
in order to separate. Remove to plate and drain the oil out
of the wok. Reheat 2 tablespoons of oil in wok over moderately
high heat stir fry snow peas for 30 seconds then remove and
set aside. Reheat 2 tablespoons of oil in the wok and add
1 cup stock. Season with 1/2 teaspoon salt and put in the
chicken mixture and bring to the boil. Thicken with dissolved
cornstarch. Serve the Chicken Velvet on a platter and trim
with snow peas and garnish the Chicken Velvet with minced
ham on top.
