CURRANT
BISCUITS RECIPE
This recipe
will teach you how to make Currant Biscuits. It is a quick
and easy recipe to make. These biscuits have a wonderful flavour
with the currants and the lemon rind through them. Serve the
Currant Biscuits for afternoon tea with a cuppa and I'm sure
everyone will enjoy them.

Biscuits Ingredients
1 egg
extra sugar
155g butter
1/2 cup sugar
2/3 cup currants
2 cups plain flour
2 tsp grated lemon rind

Biscuits Method
In a large bowl sift the flour
and rub in the butter until mixture resembles fine bread crumbs
then add currants, sugar and lemon rind and mix well. Add
beaten egg and mix to a firm dough then roll out on a lightly
floured surface to 5mm thickness then cut into rounds with
a 8cm fluted cutter. Place onto a lightly greased oven trays
and bake in a moderate oven for around 20 minutes or until
lightly browned. While still hot sprinkle with extra sugar.
