BUBBLE SLICE RECIPE
This recipe
will teach you how to make Date Bubble Slice. It is a quick
and easy recipe to make. This is a wonderful tasting slice
with the flavour of dates, coconut, lemon, peanuts and mixed
with the other ingredients and then topped with a great lemon
glaze icing is a tantalising taste sensation.
Date Bubble
Slice Ingredients
60g butter
1/2 cup sugar
1/2 cup coconut
1 Tbs lemon juice
3 cups rice bubbles
1 1/2 cups chopped dates
1/2 cup chopped roasted unsalted peanuts
Lemon Glaze Icing:
1 tsp soft butter
2 Tbs lemon juice
1 1/2 cups icing sugar

Slice Method
Grease a 19cm x 29cm lamington
pan then line the base and sides with greased paper. In a
large saucepan combine the dates, butter and sugar and stir
constantly over heat without boiling for 5 minutes. Remove
saucepan from the heat and stir in lemon juice, coconut, rice
bubbles and peanuts. Press mixture firmly into prepared pan
and spread with icing and refrigerate until set before cutting
the Date Bubble Slice.
Lemon Glaze Icing:
Combine the sifted icing sugar and butter in a bowl and
stir in enough lemon juice to give a stiff paste. Stir over
hot water until mixture is spreadable.
