EDITHS SWEDISH MEATBALLS RECIPE

This recipe will teach you how to make Ediths Swedish Meatballs. It is a quick and easy recipe to make. What an excellent appetizer you can serve them with little tooth picks and flags on them. My aunt Edith use to make these all the time for us children as a snack and we thought it was so special of her. Now we make them as appetizers for our dinner parties.

Ediths Swedish Meatballs Ingredients

1 egg
1 potato grated
1 lb ground beef
1 small onion grated
salt and pepper to taste
3 stalks celery diced fine
1 large bell pepper diced fine
slightly less than one small can tomato sauce
crushed corn flakes mixed with some flour about 2 Tbs flour to 1 cup crushed corn flakes

Ediths Swedish Meatballs Method

In a large bowl mix beef, egg, celery, bell pepper, onion potato, salt and pepper well. Add tomato sauce a little at a time mixing well. Mixture should be a little mushy but not sloppy, you can't roll them into balls using your hands. Use two small spoons such as ice tea spoons to drop mixture into corn flake mixture. Coat each meatball well. Fry in very hot oil 1/4 inch deep in a large heavy skillet until brown on all sides. Drain on paper towels.
