FILLETS
OF BEEF GOURMET RECIPE
This recipe
will teach you how to make Fillets of Beef Gourmet. It is
an easy recipe to make. This is such a special way to do your
fillets of beef. The flavours of the beef, ham, brandy, mushrooms,
butter, onion, salt and pepper cooked and then wrapped in
flaky pastry makes the Fillets of Beef Gourmet taste really
sensational.

of Beef Gourmet Ingredients
brandy
1 onion
1 egg yolk
2 Tbs butter
salt and pepper
2 lb fillet of beef
1/2 lb mushrooms
1/2 lb flaky pastry
11 thin slices of cooked ham

Brush the fillet of beef with
brandy then trim it neatly and slice into 12 equal parts.
Trim the ham slices to the same size and shape as the beef
slices. Saute the chopped mushrooms and finely sliced onion
in the butter until soft then flavour lightly with salt and
pepper. Spread each slice of ham with the mushroom mixture.
Sandwich the ham slices between the slices of beef then reform
the fillet. There should be a little mushroom mixture left
over. Skewer through the centre to hold the meat and filling
together then wrap in foil and bake in a moderate oven at
375 degrees for about 15 minutes. Allow them to cool slightly
then remove the foil.
Season the meat with salt and pepper and spread the left over
mushroom mixture on the top. Roll the flaky pastry thinly
making a piece that is large enough to completely cover the
meat. Place on a shallow oven tray and brush with cold water
and bake the Fillets of Beef Gourmet in a hot oven at 450
degrees for 15 minutes. Brush with beaten egg yolk and return
the Fillets of Beef Gourmet to the oven and bake for another
15 minutes or until the crust is brown. Serve the Fillets
of Beef Gourmet with vegetables.
