FISH WITH MUSTARD SAUCE RECIPE

Fish with Mustard Sauce.

This recipe will teach you how to make Fish with Mustard Sauce. It is a quick and easy recipe to make. Some people would never think about cooking fish in the microwave but believe me it is the best and healthy way of doing it as the fish comes out so tender. I really like the flavour of the Fish with Mustard Sauce as it has the wonderful combination of dry white wine, seeded mustard, french mustard and honey which gives this sauce an incredible taste and then added to the fish is just so exceptional. I have to say that I found the boneless, skinless gemfish the best to use for this recipe but any white fish fillets will do.

Fish with Mustard Sauce Ingredients

15g butter
1 tsp water
2 tsp honey
60g butter extra
1/2 tsp cornflour
2 Tbs dry white wine
750g white fish fillets
2 Tbs seeded mustard
1/2 tsp french mustard
3 green chopped shallots

Fish with Mustard Sauce Method

In a large shallow microwave dish melt the butter for 15 seconds then cut the fish into bite sized pieces and place the fish in dish then cover and cook on high for about 4 minutes or until fish is tender. Stir occasionally during cooking then drain. In a small bowl combine the wine, mustards and honey and cook on high for 1 minute, whisk in a bit of extra butter a little at a time. Blend the cornflour with the water and stir into the mustard mixture with shallots then cook on high for about 1 minute or until sauce boils and thickens making sure to stir half way through the cooking time. Serve the sauce over the fish. The Fish with Mustard Sauce is great served with salad.

HOT N SPICY SOLE RECIPE

Hot N Spicy Sole.

This recipe will teach you how to make Hot N Spicy Sole. It is a quick and easy recipe to make. This is a very simple way of doing fish but it is packed with flavour. Cooking in the microwave always seems to seal in the flavours better thats why I like cooking in the microwave. The flavour of the sole cooked with the coriander, cumin, garlic, curry powder, oil, lime juice, sambal oelek and fruit chutney is what gives the sole fish this wonderful taste. My husband really enjoys the Hot N Spicy Sole.

Hot N Spicy Sole Ingredients

2 tsp oil
30g butter
2 medium sole
2 tsp lime juice
2 tsp fruit chutney
1 tsp curry powder
1/4 tsp sambal oelek
1/2 tsp ground cumin
1 clove garlic crushed
1/2 tsp ground coriander

Hot N Spicy Sole Method

The first thing you must do is to prepare the fish, so lets begin by removing the skin and cut the sole with a knife at 2cm intervals over both sides of fish. In a small bowl combine all the other ingredients except the butter and then rub it all over the fish and let stand for 1 hour. In a large shallow microwave dish melt the butter on high for 30 seconds. Add the fish and brush with the butter and cook on high for about 2 minutes or until sole is tender. Serve the Hot N Spicy Sole with a big salad.
