CHILI FISH RECIPE
This recipe
will teach you how to make Whole Chili Fish. It is a quick
and easy recipe to make. My husband and I like catching our
own fish and cooking and this recipe for Whole Chili Fish
is one of our favourites. For this delicious fish recipe you
can use baby bream or small snapper or if you have some other
small fish you can use it to. This recipe is full of flavour
as it has a sensational spicy marinade that makes the Whole
Chili Fish taste magnificent.
Whole
Chili Fish Ingredients
4 small
whole fish
1 fresh red chili seeded and finely sliced
Spicy Marinade:
1 tsp sugar
1 Tbs water
1 Tbs vinegar
1 Tbs peanut oil
1/2 tsp chili paste
2 tsp ground turmeric
1 clove garlic crushed
1 tsp grated fresh ginger
1 Tbs chopped fresh coriander

Chili Fish Method
Clean the fish and run under
cold running water then pat dry and arrange in a deep tray.
To make the marinade in a bowl combine the coriander, ginger,
garlic, chili paste, sugar, turmeric, oil, vinegar and water
then pour over the fish and rub well into the skin and flesh
of the fish then cover and refrigerate for 2 hours. Grill
or barbecue the fish for 4 minutes each side or until flesh
flakes when tested with a fork. Serve the Whole Chili Fish
with any remaining marinade and boiled rice.

SALMON
CUTLETS WITH BASIL SAUCE RECIPE
This
recipe will teach you how to make Salmon Cutlets with Basil
Sauce. It is a quick and easy recipe to make.
There are so many ways of cooking fish but this is one of
my favourite recipes and the taste is just so exceptional.
The basil sauce just adds a very special flavour to the salmon
cutlets that will make your mouth water.
Salmon Cutlets with Basil Sauce Ingredients
4 x 125g salmon cutlets
freshly ground black pepper
Basil Sauce:
1
Tbs olive oil
2 Tbs lemon juice
1 clove garlic crushed
3 Tbs pine nuts toasted
4
Tbs grated parmesan cheese
1
bunch fresh basil, leaves removed
Salmon
Cutlets with Basil Sauce Method
Take a glass dish and place
the fish cutlets in it and season with black pepper. To make
the sauce in a blender place the basil leaves, lemon juice,
olive oil, garlic, parmesan and pine nuts then blend until
smooth. Spoon half the mixture over the fish then cover and
refrigerate for 30 minutes. Barbecue or grill the fish for
5 minutes each side or until the fish flakes when tested with
a fork. Serve the Salmon Cutlets with Basil Sauce with boiled
rice and the remaining sauce.
