Garden Vegetables with Rice Soup.

Garden Vegetables with Rice Soup Ingredients

1/2 onion
2 tomatoes
3 cloves garlic
1 carrot sliced
1/4 bell pepper
1 stalk of celery
2 potatoes sliced
1 zucchini squash
1/2 cup brown rice
1/2 lb fresh string beans

Garden Vegetables with Rice Soup Method

Dice all vegetables and place in a covered saucepan with 5 cups spring water or stock. Bring to a boil and reduce heat to low. Add brown rice and spices of your choice. I use a dash of light salt, coriander, thyme, sweet basil, marjoram and 1/4 cup of salsa. You may substitute other grains such as barley, millet etc. Simmer until the Garden Vegetables with Rice Soup is done.

Garlic Potato Leek Soup Ingredients

1 carrot
3 potatoes
1 large leek
6 cloves garlic
1/2 lb mushrooms

1 cup powdered milk
1 1/2 qts spring water
1 cup fresh green beans


Garlic Potato Leek Soup Method

Dice potatoes and carrots with skins on into 1/2 inch pieces. Slice leeks into thin slices and simmer with the potatoes and carrots. When carrots and potatoes are tender add remaining ingredients and simmer the Garlic Potato Leek Soup for an additional 20 minutes. You may thicken with cornstarch.
