HARVEST
CASSEROLE RECIPE
This recipe
will teach you how to make Harvest Casserole. It is a quick
and easy recipe to make. This recipe has a wonderful combination
of onions, red peppers, marrows, mushrooms, belly pork, green
olives, stock cube, garlic salt, tomato paste, salt and pepper
when all mixed together makes this fantastic tasting Harvest
Casserole. My family all like this meal cooked up on a cold
winters night and served with hot bread rolls.

Casserole Ingredients
2 onions
2 oz lard
garlic salt
1 lb baby marrows
1 Tbs tomato paste
1 lb belly pork diced
1/4 cup green olives
2 sweet red peppers
1/2 chicken stock cube
salt and pepper to taste
3 mushrooms peeled and chopped
Harvest
Casserole Method
Peel and slice the onions then
melt the lard in a large saucepan and fry them for 5 minutes
and keep the saucepan covered so onions remain soft. Remove
the seeds and stalks from the 2 peppers and then chop them.
Wash and cut up unskinned marrow into small pieces and add
these with the pork and mushrooms to the saucepan then stir
well and season to taste. Mix the tomato paste with the stock
and add to the saucepan. Cover the saucepan with lid and simmer
for 1 hour. Garnish the Harvest Casserole with the green olives.
Serve with hot crunchy bread rolls.
