CASSEROLE RECIPE

tortillas, hebs and cheese give this casserole recipe an excellent

Casserole Ingredients
3 tsp cumin
1 Tbs olive oil
12 corn tortillas
1/2 tsp cinnamon
3 tsp chili powder
1 large onion chopped
1 lb imitation crabmeat
1 cup sliced black olives
1 lb fresh tomatoes diced
10 ozs frozen corn thawed
8 ozs can enchilada sauce
3 large green chilies chopped
12 ozs monterey jack cheese shredded

Casserole Method
In a frying pan saute onion
in oil and add cinnamon, chili powder and cumin then stir
in enchilada sauce and diced tomatoes and set aside 1 cup
sauce. Add to the remaining sauce the corn, olives, green
chilies, crabmeat and 1 cup cheese. In a 3 quart shallow casserole
dish cover bottom with some of the tortillas and then spread
1/3 of crabmeat mixture over tortillas and repeat with 2 more
layers. Top with remaining tortillas, sauce and cheese. Bake
the Hassayampa Casserole at 325 degrees for 40 minutes. Serve
with hot crusty bread rolls.
