JELLY SLICE RECIPE

This recipe will teach you how to make Jelly Slice. It is a quick and easy recipe to make. This is a great tasting slice. You can use any colour jelly you like but I'll give you the one I prefer as I love strawberries and my granchildren love this one the best. Sometimes it looks real good on a plate if you have different colours especially if it is for a special occasion.

Jelly Slice Ingredients

1/4 cup milk
1 tsp gelatine
125g melted butter
2 cups boiling water
100g pink marshmallows
2/3 cup thickened cream
1/4 tsp strawberry essence
2 cups sweet biscuit crumbs
250g punnet strawberries halved
2 x 100g packets strawberry jelly

Jelly Slice Method

First thing to do grease a 19cm x 29cm lamington pan. Combine biscuits and butter in a bowl then press evenly over the base of the prepared pan and refrigerate until firm. In a saucepan combine the marshmallows, gelatine and milk then stir over low heat without boiling until marshmallows are melted. Transfer to a large bowl and add the essence then cool to room temperature. In a bowl add the cream and whip until it forms peaks then fold into the marshmallow mixture and pour over biscuit base. Place strawberries over marshmallow and refrigerate mixture for 30 minutes. Dissolve jelly in boiling water then cool to room temperature and pour jelly over strawberries and refrigerate until firm before cutting.
