BITE
SIZED FISH KEBABS RECIPE
This recipe
will teach you how to make Bite Sized Fish Kebabs. It is a
quick and easy recipe to make. These are fantastic to have
at a barbecue or just as an appetizer when you are having
the family or friends over. You can put anything on a kebab
but I particularly like the fish and cucumber on them and
sometimes I add capsicum or cherry tomatoes but it is up to
you what you add to yours but the Bite Sized Fish Kebabs are
really magnificent. They are great served with some potato
wedges and sour cream.
Bite
Sized Fish Kebabs Ingredients
1 Tbs olive oil
1 clove garlic crushed
2 Tbs white wine vinegar
freshly ground black pepper
1 spring onion finely chopped
10 lightly oiled bamboo skewers
1 Tbs finely chopped fresh basil
10 thin slices cucumber skin left on
1 firm white fish fillet cut into 2.5cm cubes

Fish Kebabs Method
In a bowl add the garlic, spring
onion, basil, oil, vinegar and black pepper to taste and then
whisk to combine. Add the fish pieces and cucumber slices
and toss to coat then set aside to marinate for 30 minutes.
Preheat the barbecue or grill to a high heat and drain the
fish and cucumber reserving marinade. Put a slice of cucumber
then a piece of fish on skewers so that the cucumber folds
halfway around the fish then brush with the reserved marinade
and cook on lightly oiled barbecue or under the grill turning
several times for 3 minutes or until fish pieces are cooked.
Serve the Bite Sized Fish Kebabs on a platter covered with
boiled rice.

LETTUCE
ROLL UPS RECIPE
This
recipe will teach you how to make Lettuce Roll Ups. It is
a quick and easy recipe to make. My
husband and I started our meal last night with Lettuce Roll
Ups and the flavour of the lettuce, bean sprouts, mangoes,
chestnuts, ginger, mint, mayonnaise and yogurt just tasted
absolutely sensational. I usually make the Lettuce Roll Ups
for our appetizers when our family is at home for a meal and
they really enjoy them. The good thing about these roll ups
is that you can get them prepared well before the family arrive.
You can use canned or fresh mangoes.
Lettuce Roll Ups Ingredients
60g
bean sprouts
3 Tbs mayonnaise
1 Tbs natural yogurt
6 large lettuce leaves
2 tsp finely chopped fresh mint
2 mangoes peeled and chopped
2 tsp finely preserved ginger chopped
250g canned water chestnuts drained and sliced
Lettuce
Roll Ups Method
In a large bowl add the sprouts,
mangoes, water chestnuts, ginger and mint and toss then add
mayonnaise and yogurt and mix well to combine. Cut lettuce
leaves in half lengthwise then place a spoonful of mixture
on each lettuce leaf half and roll up tightly and secure with
a toothpick. Chill the Lettuce Roll Ups until ready to serve.
