KIDNEYS
WITH SHERRY RECIPE
This recipe
will teach you how to make Kidneys with Sherry. It is a quick
and easy recipe to make. I use to hate one way my mother use
to cook lamb kidneys up when we were young. One night she
served up Kidneys with Sherry and ever since then I have loved
them. I prefer them with mash potatoes and beans but they
also go great with rice. The flavour of the Kidneys with Sherry
is really fantastic. I'm sure if you try them this way you
will really like them so give it a go.
Kidneys
with Sherry Ingredients
bay leaf
2 oz butter
1/2 pint water
1 1/2 Tbs flour
salt and pepper
9 Tbs dry sherry
12 lambs kidneys
1 beef stock cube
1 clove peeled garlic
1 finely chopped onion
1 Tbs chopped parsley
Kidneys
with Sherry Method
Take the kidneys and remove
the fat and skin then cut them in half lengthwise
and remove cores. Melt 1 ounce of butter in frying pan and
fry onion slowly until pale brown and soft. Add halved kidneys
and cook for 2 minutes on each side until they are fiem and
just turning brown then remove onions and kidneys from pan
and keep hot. Melt remaining butter in pan and blend in the
flour then add clove of garlic, water, stock cube and sherry,
blending until smooth. Add bay leaf, salt and pepper to taste
and bring to boil keep stirring until sauce is thickened.
Return onion and kidneys to pan and simmer for 5 minutes or
until kidneys are cooked. Remove the bay leaf and add more
seasoning if necessary. Arrange on a serving dish and pour
sauce over and sprinkle the Kidneys with Sherry with parsley.
