LAMB
CHOPS WITH RATATOUILLE RECIPE
This recipe
will teach you how to make Lamb Chops with Ratatouille. It
is a quick and easy recipe to make. This is a wonderful tasting
lamb recipe. The chops are covered in mixed herbs and cooked
then you make the ratatouille out of green peppers, onions,
butter, eggplants, tomatoes and season with salt and pepper
then put the chops on top of the ratatouille and the flavour
is exceptional.
Lamb Chops
with Ratatouille Ingredients
2 oz butter
4 loin chops
1 Tbs salad oil
1/2 tsp mixed herbs
For the Ratatouille:
2 oz butter
2 eggplants
8 oz tomatoes
salt and pepper
2 onions quartered
2 large green peppers
Lamb Chops
with Ratatouille Method
In a baking pan melt 2 ounces
butter with oil then sprinkle the chops with mixed herbs and
add it to the pan. Put it in the hot oven and cook for 15
minutes or until tender. Meanwhile prepare the ratatouille.
Cut the peppers in half and remove the seeds then cut into
1/2 inch wide strips. Coarsely shred the onions then melt
the butter in a frying pan and fry the peppers and onions
for 5 minutes or until they are soft and onion is golden brown.
Remove the stalks from the eggplants and cut them in 1/4 inch
thick slices. Put the tomatoes in boiling water for 10 seconds
then drain and remove the skins then quarter them and remove
the seeds. Add the tomatoes and eggplant to the pan and cook
a further 5 minutes then season the ratatouille with salt
and pepper. Turn the ratatouille onto a serving plate and
arrange chops on top. The Lamb Chops with Ratatouille is great
served with warm dinner rolls.
