LAMB
WITH DUMPLINGS RECIPE
This recipe
will teach you how to make Lamb with Dumplings. It is a quick
and easy recipe to make. This is a really good meal to have
on a cold winters night. The flavour of the dumplings with
herbs in them are just terrific. My mum when she used to dish
up the Lamb with Dumplings would not let us have any bread
with it to as she used to say the dumplings were our bread
at this meal. It took me years till I was older to realise
what she meant but now I say the same to my children.
Lamb with
Dumplings Ingredients
1 Tbs oil
3/4 pint water
2 large onions
2 Tbs seasoned flour
1 chicken stock cube
1/2 x 8 oz packet frozen peas
1 lb carrots peeled and sliced
1 1/2 lb lamb boned and chopped
For the Dumplings:
little cold water
1 Tbs mixed herbs
2 oz shredded suet
1 cup self raising flour
salt and pepper to taste
Lamb with
Dumplings Method
Preheat oven to 375 degrees.
Make sure to remove any excess fat from the meat then chop
it into medium size pieces then roll in seasoned flour. In
a frying pan lightly fry the onion taking care not to brown
then add the meat pieces and fry lightly for 2 minutes. Dissolve
the chicken stock cube in 3/4 pint boiling water and then
add to the onion and meat with the carrots. Turn into an ovenproof
casserole dish and cover and cook in preheated oven for 1
hour. Make the dumplings by mixing the flour with the suet,
herbs and seasoning then add sufficient cold water to make
a stiff dough then form into balls. Stir the peas into the
meat mixture and arrange the dumplings on top and put it back
in the oven and cook the Lamb and Dumplings for a further
20 minutes.

FRICASSEE
OF LAMB RECIPE
This
recipe will teach you how to make Fricassee of Lamb. It is
a quick and easy recipe to make. This
is a wonderful tasting meal with
the flavour of lamb,
carrot, onion, mushrooms and then mixed with the other ingredients
goes into making the Fricassee of Lamb taste absolutely fantastic.
My dear old mother used to make this for us when we were young
as there were six children in our family and she used to make
a great big pot full. She used to make it and let it cool
and then remove the fat off the top then reheat it and it
really was a very nourishing meal for our family.
Fricassee of Lamb Ingredients
1 bay
leaf
1 oz butter
1 Tbs cream
pinch rosemary
1 1/2 lb lamb diced
2 Tbs seasoned flour
1 Tbs chopped parsley
salt and pepper to taste
1 large onion peeled and sliced
1 large carrot peeled and sliced
6 3/4 oz can button mushrooms
Fricassee
of Lamb Method
Preheat oven to 375 degrees.
Put the seasoned flour
into a bowl and add the lamb and coat it all over. In a frying
pan cook the onion and carrot gently in the butter for 2 minutes
but do not let it brown then add the meat and turn in the
hot fat to seal then sprinkle in the rest of the flour and
stir well and turn into an ovenproof casserole and add sufficient
water to cover. Add the bay leaf and rosemary and cover then
cook in preheated oven for 1 1/2 hours adding the mushrooms
for the last 15 minutes of cooking time. Taste and add more
seasoning if needed. Remove the lid and stir the cream in
and sprinkle with the parsley and serve the Fricassee of Lamb
straight away.
