LAMB
HOTPOT RECIPE
This recipe
will teach you how to make Lamb Hotpot. It is a quick and
easy recipe to make. This is such a great meal to make especially
on those cold winters night. The combination of onion, garlic,
leek, carrots, celery, tomatoes, lamb steaks, chicken stock,
tomato paste, button mushrooms and potatoes are what goes
into making the Lamb Hotpot a really sensational tasting meal.
I like to make the Lamb Hotpot up when I am having visitors
for a meal in the winter months.
Lamb Hotpot
Ingredients
1 bay leaf
2 Tbs flour
60g butter diced
400g can tomatoes
1 onion finely sliced
2 Tbs tomato paste
3 celery sticks sliced
1 clove garlic crushed
125g button mushrooms
salt and pepper to taste
1 leek trimmed and sliced
2 large carrots finely sliced
2 large cooked potatoes sliced
1 chicken stock cube crumbled
500g lamb steaks cut from the leg
Lamb Hotpot
Method
Place 1 tablespoon butter in
a deep casserole dish and cook on high for 1 minute then add
the onion, garlic and leek then cover and cook on high for
3 minutes. Add the carrots, celery and 2 tablespoons of juice
from the tomatoes and cover and cook on high for 6 minutes.
Trim the fat from the lamb and cut it into cubes then toss
the cubes in the flour and add to the vegetables together
with the canned tomatoes, stock cube, tomato paste and bay
leaf. Cover the Lamb Hotpot and cook on high for 6 minutes
stirring half way through the cooking time. Add the mushrooms
to the Lamb Hotpot reduce to low and cook for a further 30
minutes stirring every 5 minutes. Taste and season the Lamb
Hotpot then layer the potatoes over the meat then dot the
Lamb Hotpot with butter and brown in a conventional oven.

WITH PILAFF RECIPE
This
recipe will teach you how to make Lamb with Pilaff. It is
a quick and easy recipe to make.
This recipe is so nourishing and the taste is absolutely fantastic.
It is so easy and quick to cook in the microwave and you can
always have a meal ready in minutes after working all day.
My mother always told me cooking is not just making it taste
good but it is also in the presentation of it so I try to
always make my meals look really good that it makes you want
to have some. You can certainly make the Lamb with Pilaff
taste really good and look good.
Lamb with Pilaff Ingredients
1 Tbs oil
3 Tbs flour
2 Tbs butter
2 onions chopped
1 tsp ground cumin
2 Tbs tomato paste
1kg boned leg of lamb
1 clove garlic crushed
1/2 tsp ground allspice
salt and pepper to taste
1/2 cup hot chicken stock
Pilaff:
3 Tbs butter
1/2 cup currants
1 cup long grain rice
1 small onion chopped
salt and pepper to taste
2 cups hot chicken stock
1/2 cup almonds blanched and chopped
Lamb
with Pilaff Method
Remove the meat from bone and
cut into bite sized cubes. Pour oil into bowl and add butter
and cook for 1 minute. Stir in onion and garlic and cook for
3 minutes. Add the meat and cook covered for 3 minutes. Stir
in the flour and add remaining ingredients. Cook the Lamb
with Pilaff covered for 10 minutes. Allow to stand for 15
minutes then cook for a further 6 minutes. To make the pilaff
place the butter in a large shallow dish and cook for 1 minute.
Stir in the onion and rice and cook for 4 minutes. Add the
stock and seasoning and cook for 15 minutes or until rice
is fluffy adding extra stock if necessary. Check seasoning
and stir in currants and almonds before serving the Lamb with
Pilaff.
