LUNCHEON CASSEROLE RECIPE

Luncheon Casserole Ingredients
1/2 can
milk
1 can tomato soup
1/2 lb bacon chopped
1/2 cup tomato ketchup
1 cup onion finely chopped
1/2 lb cheddar cheese grated
2 cups macaroni cooked and rinsed

Luncheon Casserole Method
Preheat oven to 350 degrees.
Boil the macaroni for 10 minutes in 2 quarts boiling water
to which 1 teaspoon of salt has been added then drain and
rinse with cold water. Cut up the bacon and fry until most
of grease is removed but not crisp and remove it from the
pan and then add onion and fry it in the bacon fat until just
transparent. In a bowl mix tomato soup, milk and tomato ketchup.
In a small bowl grate the cheese. Grease 2 quart casserole
and place 1/3 of macaroni in bottom of dish then sprinkle
1/3 of bacon, cheese and onion over it and then pour 1/3 of
tomato mixture over it. Repeat for two more layers then cover
and bake the Macaroni Luncheon Casserole for 1 1/2 hours.
This recipe freezes well and can be frozen without baking.
