MANDARIN
CHICKEN RECIPE
Mandarin Chicken what a great
recipe and who would of thought you could use mandarins in
a chinese recipe. The flavours of the chicken, mandarins,
olives, green peppers and the other ingredients in this recipe
gives a most wonderful taste to it. And served over rice is
just the end to a fantastic meal.
Mandarin
Chicken Ingredients
2 tsp salt
1 tsp pepper
2 cups water
1 cup ketchup
hot cooked rice
3 Tbs cornstarch
1/4 cup soy sauce
1/2 cup cold water
1 tsp garlic powder
1 tsp ground ginger
1/4 cup brown sugar
2 tsp ground mustard
11 oz mandarins drained
1/2 cup whole pitted olives
2 Tbs chopped green pepper
1 chicken cut up and skin removed
1/4 cup frozen orange juice concentrate

Chicken Method
Place the chicken in a large
resealable plastic bag. In a bowl combine water, ketchup,
brown sugar, soy sauce, orange juice concentrate, mustard,
salt, pepper, ginger and garlic powder and then pour half
over the chicken in the bag. Seal the bag with chicken and
marinade in it and cover the remaining marinade and refrigerate
for 8 hours or overnight. Drain chicken discarding the marinade
and place chicken in a slow cooker and add reserved marinade.
Cover and cook on low for 7 to 8 hours. Combine cornstarch
and cold water until smooth and stir into the chicken mixture.
Add mandarins, olives and green pepper then cover and cook
on high for 30 to 45 minutes or until thickened. Serve the
Mandarin Chicken over rice.
