MEATBALL SALAD RECIPE

Meatball Salad.

This recipe will teach you how to make Meatball Salad. It is a quick and easy recipe to make. What a great salad this is you need not have anything else with the Meatball Salad as it is a meal on its own. My granchildren really love this salad as it has little meatballs in it and they say that the Meatball Salad is special.

Meatball Salad Ingredients

For the Salad:
1 egg
1 Tbs oil
1 lb potatoes
1 lb mince steak
1 Tbs breadcrumbs
1/4 tsp dried thyme
1/2 tsp mixed herbs
1/4 tsp dried marjoram
1 cup of dressing for serving
15 oz can of asparagus spears
lettuce, parsley and celery curls for garnishing

For the Dressing:
1/2 tsp salt
1/4 tsp pepper
1/2 cup vinegar
1/2 cup salad oil
1/4 tsp dry mustard

Meatball Salad Method

Combine all ingredients for dressing in screw top jar and shake well together then chill. Shake again before using. For the salad peel and cook the potatoes then drain them. Combine the meat, marjoram, thyme, egg and breadcrumbs mixing well then shape into 32 small meatballs. Saute the meatballs in the heated oil in a frypan until they are browned on all sides and cooked through. Drain the asparagus and place it in a shallow dish then place the potatoes in another shallow dish. Divide the dressing evenly between the meatballs, asparagus and potatoes. Cover the dishes and refrigerate turning the contents over occasionally during this period. Wash lettuce and drain well and use to line a serving platter. Arrange the meatballs, asparagus and potato on the lettuce. Garnish the Meatball Salad with parsley and celery curls.

ORANGE BASKET SALAD RECIPE

Orange Basket Salad.

This recipe will teach you how to make Orange Basket Salad. It is a quick and easy recipe to make. This salad just does not taste good but also looks fantastic in the orange skin basket. The Orange Basket Salad looks really great as an appetiser at your next dinner party and the flavours of the oranges, mushrooms, rice, chicken, prawns and orange slices with the dressing makes the Orange Basket Salad taste really exceptional.

Orange Basket Salad Ingredients

For the Dressing:
salt
paprika
1 orange
chili powder
1 Tbs vinegar
2 Tbs salad oil
freshly ground black pepper

For the Salad:
3 oranges
orange slices
4 oz mushrooms
4 oz cooked rice

8 oz cooked prawns

8 oz chicken cooked and chopped

Orange Basket Salad Method

Cut the orange for the dressing in half and squeeze the juice from one half and reserve the other half for the salad garnish. Combine orange juice, vinegar and oil in a screw top jar and shake well. Season to taste with salt, paprika, chili powder and freshly ground pepper. Using a grapefruit knife scoop out the flesh and the pith from the 3 oranges. Wash and slice the mushrooms and marinate them in the dressing. Mix the cooked rice with the chicken and half the prawns and add a little of the chopped orange flesh and mushrooms. Spoon this mixture back into the orange shells topping with a few prawns and a twist of orange.
