MERINGUE
FRUIT FLAN RECIPE
This recipe
will teach you how to make Meringue Fruit Flan. It is a quick
and easy recipe to make. This is a fantastic tasting and looking
dessert to make. I like making this flan when I am going to
my daughters for dinner as my grandsons really like it when
I make a special dessert and this one always looks like its
made for a special occasion and I believe when families get
together for a meal it is a special occasion. You can use
any fruit you like to make this flan but I use these fruits
becauce there my favourites and the colours go well together.
Meringue
Fruit Flan Ingredients
4 eggs
1 oz cornflour
1 1/4 cups castor sugar
1/2 pint evaporated milk
tin pears and raspberries
few drops vanilla essence

Fruit Flan Method
Preheat oven to 200 degrees.
In a large bowl separate eggs and whisk whites until stiff
and standing in peaks then add 4 oz sugar and whisk again
until thick. Fold in another 4 oz sugar using a metal spoon
then put the mixture into a large piping bag fitted with a
star nozzle and then pipe a large round on a baking tin and
spread inwards to make a base. Pipe around the edge of the
circle to build up sides. Bake on lowest shelf of oven for
2 hours or until completely dried out.
Mix the cornflour and remaining sugar with a little of the
milk to make a smooth paste then bring the remaining milk
to the boil and pour over the cornflour. Return to pan and
bring back to the boil stirring until thickened then cook
for 2 minutes. Add egg yolks and vanilla then beat well and
heat gently but do not boil then leave until cold. Drain the
fruits and spread the cold vanilla cream into the case and
arrange the fruit on top of the Meringue Fruit Flan.
