LEMON
MERINGUE PIE RECIPE
This recipe
will teach you how to make Lemon Meringue Pie. It is a quick
and easy recipe to make. This
is a pie that taste sensational but also really looks great
when you cut it and can see the yellow and white. I really
like making the Lemon Meringue Pie when my friends come for
dinner as they really enjoy the pie. My friend said she tried
to make it but hers just doesn't turn out as good as mine
and I felt really flattered that she said that.

Meringue Pie Ingredients
pinch salt
1 cup sugar
1 Tbs butter
3 dsp cornflour
3 dsp plain flour
1 1/2 cups water
3 eggs separated
1/3 cup lemon juice
1/2 tsp lemon rind grated
1 baked 8 inch pastry case
1 tsp lemon juice and 6 Tbs sugar for meringue

Meringue Pie Method
Blend the sugar, flour, salt,
cornflour and water in a bowl. Place in a saucepan and cook
stirring constantly over medium heat until mixture boils and
thickens about 5 minutes. Remove from the heat and add the
beaten egg yolks and stir well. Return to the heat and cook
another 3 minutes. Remove from the heat again and add the
grated lemon rind and the butter and lemon juice mixing well.
Cool slightly then pour into the cooked and cooled pie shell.
Allow to cool to room temperature. Beat the egg whites in
a warm bowl until stiff peaks form adding the teaspoon lemon
juice then gradually add the 6 tablespoons of sugar beating
until glossy peaks form. Spread over the lemon filling, the
meringue must touch the pastry at the edges. Bake in a moderate
oven 325 degrees for 12 to 15 minutes or until the peaks of
the meringue are lightly brown. Cool the Lemon Meringue Pie
thoroughly before serving.

LIME
PIE RECIPE
This
recipe will teach you how to make Lime Pie. It is a quick
and easy recipe to make. The
mixture of the lime juice, lime rind, gelatine, sugar, water,
salt and eggs blended together and added to the pie shell
and decorated with whipped cream makes the Lime Pie a sensational
treat. And the taste is just so sensational.
Lime Pie Ingredients
1/4 tsp salt
1/4 cup water
4 eggs separated
1 unflavoured gelatin
2 tsp grated lime rind
2/3 cup sugar divided
1/2 cup key lime juice
1 x 9 inch baked pastry shell
Lime Pie
Method
Mix together gelatin, 1/3 cup
sugar and salt in saucepan. Combine slightly beaten egg yolks,
water and lime juice then add to gelatin mixture. Place over
low heat stirring constantly until gelatin dissolves about
6 minutes then remove from heat and add rind and cool. Beat
egg whites until stiff but not dry and gradually add remaining
1/3 cup sugar and beat until stiff then fold in gelatin mixture.
Turn into pastry shell and chill until firm. Garnish the Lime
Pie with whipped cream and lime slices if desired.
