MINESTRONE SOUP RECIPE

Soup Ingredients
2 Tbs parsley
1 cup diced ham
1qt chicken broth
1 lb corn chickpeas
10 oz can tomatoes
1/2 cup diced celery
1 clove garlic minced
1/2 cup diced carrots
1 medium potato diced
1 medium potato diced
1/2 cup elbow macaroni
grated parmesan cheese
1 packet frozen chopped spinach
Minestrone
Soup Method
Combine all ingredients except
macaroni and cheese in crockpot cooker. Add water if chicken
broth does not cover. Cook on high 1 hour and then switch
to low and cook 6 to 8 hours. One half hour before finnished
cooking time add macaroni and stir. Serve Minestrone Soup
generously sprinkled with cheese.

Pepper Pot Soup is a good nourishing soup for the winter months.
It has exceptional flavour that tastes sensational. My whole
family comes home for a meal once a month and in the winter
months I put on a big pot of soup as it is so great to sit
around and have a good family talk over a plate of Pepper
Pot Soup and hot crusty buns.
Pepper Pot Soup Ingredients
2
qt water
1 lb shanks
1/2 cup sliced carrots
1/2 cup diced potatoes
1/4 cup chopped celery
2 large onions quartered
1 cup fresh or frozen okra
salt and ground pepper to taste
2 ripe tomatoes seeded and diced
1/2 cup fresh or frozen corn kernels
1 large sweet bell pepper seeded and diced
Pepper
Pot Soup Method
Put meat, water, and onions
in a heavy soup kettle. Cover and bring to a boil over high
heat. Reduce heat to low and simmer for 3 hours. Remove meat
and let it cool and discard bones then return meat to pot.
Stir in remaining vegetables and simmer partially covered
for 1 1/2 hours. Season the Pepper Pot Soup with salt and
pepper.
