CARLOS RECIPE
This recipe

It is
a quick and easy recipe to make. This
biscuit recipe for Monte Carlos is a great tasting treat.
Two biscuits with lovely creamy filling with a touch of raspberry
jam.

Carlos Ingredients
1 egg
185g butter
1 tsp vanilla
1/2 cup sugar
3/4 cup plain flour
1 3/4 cups self raising flour
Filling:
2 tsp milk
60g butter
1/2 tsp vanilla
raspberry jam
3/4 cup icing sugar
Monte Carlos
Method
In a large bowl add the butter
and sugar then cream until light and fluffy. Add egg and the
vanilla and beat well then add sifted dry ingredients and
mix well. Put teaspoonfuls of mixture onto greased oven trays
and press each biscuit down lightly with the back of a fork.
Bake the Monte Carlos in a moderate oven 12 minutes or until
golden brown. When cold join with raspberry jam and filling.
Filling: Cream butter and sifted icing sugar in a bowl
until mixture is light and fluffy then add vanilla and gradually
add milk then beat well.
