MOZZARELLA PARCELS RECIPE

Mozzarella Parcels.

This recipe will teach you how to make Mozzarella Parcels. It is a quick and easy recipe to make. This recipe has a great combination of spring onion, mozzarella cheese, ham, tomatoes and green olives then served with a lemon sauce with the mixture of garlic, olive oil, lemon juice, basil and pepper which all go into making the Mozzarella Parcels taste absolutely sensational. This appetizer is wonderful served with slices of french stick bread. I sometimes make these appetizers for my grandsons when they call in on there way home from school as they like coming to there nanna's for afternoon snacks.

Mozzarella Parcels Ingredients

4 slices ham
4 spring onions
24 green olives
4 tomatoes sliced
200g mozzarella cheese

Lemon Sauce:
2 Tbs olive oil
1 Tbs lemon juice
1 clove garlic crushed
1 Tbs chopped fresh basil
freshly ground black pepper

Mozzarella Parcels Method

You will only be using the tops of the spring onions so cut the tops off the spring onions and place in a bowl then pour boiling water over them and drain then cut into strips and set aside. Cut 4 slices mozzarella cheese then wrap each slice in a slice of ham and tie with a spring onion strip. Make the sauce by placing garlic, oil, lemon juice, basil and pepper into a screw top jar and shake well to combine. On individual small serving plates arrange a Mozzarella Parcel with tomato and olives then drizzle the sauce over the top and serve immediately.

BEEF AND VEGGIE LETTUCE CUPS RECIPE

Beef and Veggie Lettuce Cups.

This recipe will teach you how to make Beef and Veggie Lettuce Cups. It is a quick and easy recipe to make. These appetizers do not just taste good but look good to and once you taste them you just want to come back for more. I make the Beef and Veggie Lettuce Cups up when I am having family or friends over and I just want to make some small appetizers up to snack on before the main meal. The colour of the green crunchy lettuce leaves looks absolutely fantastic with the beef and veggie mixture in them and the best thing is you can make the filling up the day before and just warm it again before putting it in the lettuce cups. You can also have the Beef and Veggie Lettuce Cups as a main meal with a garden salad as my husband and I sometimes do.

Beef and Veggie Lettuce Cups Ingredients

1 Tbs olive oil
125 mls red wine
2 red onion sliced
500g minced beef
125 mls beef stock
3 Tbs tomato puree
1 tsp ground turmeric
1 tsp ground cinnamon
2 Tbs chopped pimento
2 Tbs chopped fresh mint
1 tsp ground sweet paprika
2 Tbs chopped fresh parsley
250g snow peas sliced diagonally
250g baby yellow squash chopped
8 large lettuce cups washed and drained
410g canned red kidney beans drained and rinsed

Beef and Veggie Lettuce Cups Method

In a large frying pan heat the oil then add the beef and cook on high heat for 10 minutes or until meat is well browned and all the liquid has evaporated. Add the cinnamon, turmeric, paprika, mint, parsley, tomato puree, wine, stock, beans and pimento then stir and cook it over a medium heat for 5 minutes. After that stir in the snow peas, onions and squash then cook until veggies are crisp but tender and almost all the liquid has evaporated. Spoon the beef mixture into the lettuce cups and serve the Beef and Veggie Lettuce Cups immediately.
