ORANGE
BEEF RECIPE
This recipe
will teach you how to make Orange Beef. It is a quick and
easy recipe to make. Orange
Beef has a great tangy and citrus flavour. The fantastic flavours
of beef, dried red chili peppers and orange rind and the other
ingredients makes this an unbelievable tasting recipe especially
served with boiled rice.

Beef Ingredients
2 egg whites
2 Tbs sherry
6 Tbs peanut oil
2 Tbs cornstarch
1/2 lb top round steak cut into 2 x 2 inch pieces
SAUCE:
1 tsp sugar
1 1/2 Tbs cornstarch
1 1/2 cups beef stock
2 Tbs light soy sauce
1 tsp red wine vinegar
8 thin slices of orange rind
fresh ground black pepper to taste
5 dried red chili peppers broken into pieces

Beef Method
In a bowl whisk together the
sherry, cornstarch and egg whites until the mixture is foamy
then add the beef and toss to coat the pieces well and set
aside. Heat 4 tablespoons peanut oil in wok and fry quickly
just until crispy and browned then remove to wok rack to drain.
Add remaining 2 tablespoons peanut oil to wok then add orange
rind and red peppers. Stir fry until orange rind begins to
darken and the aroma from the oil becomes pleasant. Add remaining
ingredients and stir until bubbly, add more beef stock if
too thick. Add fried beef and toss to coat with sauce. Serve
the Orange Beef at once with steamed white rice.
