PANCAKES
WITH GINGERED DATES AND FIGS RECIPE

Pancakes
with Gingered Dates and Figs Ingredients
1 cup milk
1 Tbs honey
1/2 cup water
1/2 cup sugar
2 eggs beaten
30g butter melted
1/4 cup lime juice
2 Tbs castor sugar
1 tsp baking powder
12 fresh dates halved
4 fresh figs quartered
200g swiss vanilla yoghurt
1 1/2 cups self raising flour
30g piece fresh ginger peeled, cut into strips
Pancakes
with Gingered Dates and Figs Method
Sift the flour, baking powder
and castor sugar into a large bowl then stir in the eggs,
milk and butter and whisk to form a smooth batter. Coat a
grill or a flat pan with cooking spray and heat then drop
2 tablespoons of the batter onto the surface. Cook until the
underside is set and golden then flip it over and cook the
other side till golden. Repeat with the remaining batter to
make 12 pancakes. Combine the ginger, honey, water, sugar
and juice in a pan. Heat without boiling until the sugar has
dissolved. Stir in the dates and figs then cook gently until
the fruit is soft. To serve arrange 2 pancakes on each serving
plate and top with the gingered fruit and the yoghurt. I'm
