COURGETTES
WITH PASTA RECIPE

stock cube, courgettes, onion, olive oil, parsley, garlic
and parmesan cheese but these ingredients are packed full
of flavour.

with Pasta Ingredients
1 onion
olive oil
a little parsley
1/2 stock cube
500g courgettes
350g fresh pasta
1 large garlic clove
a little grated parmesan cheese
Courgettes
with Pasta Method
First of all clean and trim
the courgettes then wash and dry them well. Cut the courgettes
into rounds about 5mm thick. Finely chop the onion, parsley
and garlic and fry in 5 tablespoons of oil without browning.
Then add the courgettes and crumble in the stock cube. Add
a little freshly ground pepper then cover with boiling water
and stir well. Put lid on the pan and cook over moderate heat
for about 10 minutes until the courgettes are tender and the
liquid has been absorbed. Season to taste. Cook the pasta
in salted boiling water until soft. Drain and stir in 2 tablespoons
of olive oil. Mix in the sauce and serve the Courgettes with
Pasta at once with the parmesan cheese.

LINGUINE WITH CHICKEN RECIPE

Creamy Linguine with Chicken
Ingredients
1
tsp salt
1 Tbs butter
1 Tbs olive oil
2/3 cup cream
1/2 tsp pepper
1/2 tsp paprika
1/8 tsp cayenne
1 Tbs basil chopped
2 cups chicken broth
4 cloves garlic minced
2 onions cut into slices
1/2 can diced tomatoes
8 oz linguine broken into thirds
4 skinless boneless chicken breast halves
Creamy
Linguine with Chicken Method
Season chicken with salt, pepper
and paprika. In a deep 12 inch skillet melt the butter in
the olive oil over medium heat. Add the chicken and cook turning
until lightly browned. Remove the chicken and set aside. Add
the onion and garlic to the skillet and cook stirring occasionally
until softened but not browned . Add the chicken broth and
tomatoes with their juices and cream and bring to a boil.
Stir in the linguine, basil and cayenne and return to a boil.
Reduce the heat to low and return the chicken to the skillet
and cover. Cook until the chicken is white but still juicy
and the pasta is tender about 15 minutes. Increase heat to
medium high and boil until the sauce is slightly thickened.
Serve the Creamy Linguine with Chicken with a heated crusty
roll.
