PATTIES WITH AUBERGINE PUREE RECIPE
This recipe

is a fantastic pork recipe to make. All my family really like
the Pork Patties with Aubergine Puree. The aubergine other
wise known as the eggplant makes a terrific puree especially
with cummin seeds, shallot and the flesh of the aubergine
and then the fromage frais and black pepper mixed together
and then served with the pork patties makes the taste really
exceptional. My family likes the Pork Patties with Aubergine
Puree served with mashed potato, peas and pumpkin.
Pork Patties
with Aubergine Puree Ingredients
500g aubergines
45g fromage frais
1 Tbs safflower oil
1 1/4 tsp cumin seeds
2 tsp ground coriander
1 shallot finely chopped
freshly ground black pepper
fresh coriander sprigs for garnish
450g trimmed leg of pork minced
20g spring onion white part only finely chopped
Pork Patties
with Aubergine Puree Method
In a bowl add the minced pork
with the finely chopped spring onions and ground coriander
and mix well then form into eight patties measuring about
6cm in diameter. Cut the aubergines in half lengthwise and
place them in a vegetable steamer. Lay a sheet of grease proof
paper over the top and steam until they are tender about 10
minutes. In a non stick frying pan heat the cumin seeds stirring
frequently for about 3 minutes then add finely chopped shallot
and cook it until it has softened.
Scoop the flesh from the aubergine halves and puree in a blender
together with the contents of the frying pan. Return the mixture
to the frying pan and stir in the fromage frais and some freshly
ground black pepper. In another non stick frying pan over
high heat brown the pork patties for 3 minutes on each side
then reduce heat and cook a further 3 minutes. Gently warm
the puree over low heat stirring constantly. Spoon the puree
onto four warmed plated and place 2 patties on each plate
and garnish the Pork Patties with Aubergine Puree with the
sprigs of coriander.

BURGERS RECIPE
This
recipe will teach you how to make Pork Burgers. It is a quick
and easy recipe to make. Do
you and your family ever just sit around and have a burger
night well mine do.
My daughters and
I get in the kitcen and we make up some of the Pork Burgers
they are so tasty and nourishing. Some of the younger children
do not like chilies so we make some without the chilies in
them and instead of using the chili topping they just have
sauce. My husband really enjoys it when we have our burger
night as he loves the Pork Burgers especially with the chili
topping.
Pork Burgers Ingredients
1/4 tsp
salt
4 slices tomato
1 Tbs safflower oil
4 mild chili peppers
1/4 tsp chili powder
1/2 tsp dry mustard
1 onion very finely chopped
4 wholemeal baps split in half
4 crisp lettuce leaves washed and dried
250g pork fillet trimmed of fat and minced
250g topside of veal trimmed of fat and minced
Chili Topping:
1 carrot grated
4 Tbs chili relish
2 shallots finely chopped
2.5cm piece cucumber finely chopped
Pork Burgers
Method
In a large bowl combine the
pork with veal, onion, salt, dry mustard and chili powder
then form into four burger shapes about 1cm thick. In a large
frying pan heat the oil then add the Pork Burgers and cook
them for 5 to 6 minutes on each side. Meanwhile make the topping.
In a bowl combine the chili relish, carrot, shallots and cucumber.
Warm the baps under a medium hot grill then arrange a lettuce
leaf on the base portion of each bap then add the burger to
each and top with a slice tomato and a spoonful of chili topping
then cover with the bap lids and secure them in position with
cocktail sticks. Garnish the Pork Burgers with the pickled
chili peppers and serve immediately.
