PEAR ON PEAR TART RECIPE

Pear On Pear Tart.

This recipe will teach you how to make Pear On Pear Tart. It is a quick and easy recipe to make. Anyone who likes pears will really like the Pear On Pear Tart. The combination of ginger, pears and apricot preserves mixed with the rest of the ingredients makes this an absolutely fantastic tasting tart.

Pear On Pear Tart Ingredients

sugar
1 egg yolk
1/8 tsp salt
8 ripe pears
2 1/2 Tbs Ice water
1 tsp ground ginger
1/2 cup unsalted butter
1/3 cup apricot preserves
1 1/4 cups all purpose flour

Pear On Pear Tart Method

Preheat oven to 425 degrees. To make the pastry: Combine the flour with the salt and 2 tablespoons of sugar in a large bowl. Cut in the butter with a knife. Blend with a pastry blender until the flour has the texture of coarse crumbs. Combine the egg yolk with the ice water and work into the flour mixture to form a soft dough. Add more water if necessary. Knead briefly and press the dough over the bottom and sides of a buttered loose bottomed 10 inch quiche pan. Trim the edges. Line the pastry with aluminum foil and weight with rice or beans then bake 10 minutes. Remove foil and rice or beans and bake until the pastry is golden 5 to 10 minutes then cool on a rack.

To make the caramel:
Combine 1/3 cup of sugar with 2 tablespoons water in a medium skillet. Heat to boiling and boil until the mixture turns a light caramel color. Carefully but quickly brush the caramel over the bottom and sides of the pastry shell.

To make filling:
Peel 6 of the pears and cut in half and remove the cores. Cut each half into 4 slices. Place the pears in a large heavy skillet or saucepan and combine 2/3 cup sugar, ginger and 1 cup water and pour over the pears. Heat to boiling and reduce the heat then simmer covered until pears are soft but not mushy 6 to 8 minutes depending on ripeness of pears then cool and drain the pears reserving the liquid. Arrange the pears over the bottom of the pastry shell. Peel the remaining pears and cut into quarters and remove the cores. Cut each quarter into thin slices. Arange symmetrically over the cooked pears. Combine the apricot preserves with 4 tablespoons of the pear liquid in a small saucepan. Heat to boiling and strain. Brush the tart with half the apricot mixture then bake 30 minutes. Remove from oven and brush with the remaining apricot mixture. Serve the Pear On Pear Tart slightly warmed with whipped cream if desired.

PLUM PIE RECIPE

Plum Pie.

This recipe will teach you how to make Plum Pie. It is a quick and easy recipe to make. We have our own plum trees so our family make a lot of plum pies. All our family from our grand mother down to my grand daughter still cooks Plum Pie. I really like it served with whipped cream or ice cream.

Plum Pie Ingredients

Crust:
1 milk
2 cups flour
1 pinch salt
2 Tbs sugar
1 egg beaten
1 tsp baking powder
3/4 cup unsalted butter

Filling:
2 Tbs flour
1/2 cup sugar

1 tsp cinnamon

2 lb Italian plums quartered and pitted


Plum Pie Method

Combine the flour, salt, baking powder and sugar. Cut in the butter until it is very fine then add the beaten egg and the milk and work the mixture with fingers until it is smooth. Press it evenly over the bottom and sides of a 9 inch round tart pan with removable bottom. Place the pitted plums over the crust and sprinkle 1/4 cup of the sugar over the plums. Combine the remaining sugar with the cinnamon and flour then sprinkle it over the top. Bake at 400 degrees for 40 minutes or until the plums are bubbling with syrup.
