PIGLETS
RECIPE
This recipe
will teach you how to make Piglets. It is a quick and easy
recipe to make. This is a terrific recipe to make as the flavour
is fantastic. What I like doing with these Piglets is to cook
up a big bowl of pasta and put the Piglets and the sauce over
it. My grandsons really love coming to nannas for a big feed
of Piglets and pasta and I always make a lot so they can come
back for a second helping.
Piglets
Ingredients
1 bunch watercress
2 eggs lightly beaten
salt and pepper to taste
2 Tbs seasoned stuffing
12 oz cooked pork minced
dry breadcrumbs for coating
For the Sauce:
1/2 oz butter
1 dsp cornflour
1 beef stock cube
1 tsp brown sugar
1/2 x 5oz can tomato paste
Piglets
Method
In a large Bowl mix together
the minced pork, dry stuffing, seasoning and half the beaten
egg then add just enough hot water to make a firm paste. Let
this mixture set for at least 12 minutes. While you are waiting
make the sauce. Dissolve the stock cube in half pint of boiling
water then add tomato paste, sugar and butter then cook gently
for 6 minutes. In a cup blend the cornflour with a little
water and then stir into the sauce and continue to cook making
sure to keep stirring it for another 4 minutes. Take the pork
mixture and divide it into 12 even sized balls then coat in
remaining egg and breadcrumbs then deep fry them in fat until
golden all over. Serve the Piglets with sauce over hot pasta
and decorate with the watercress.

STUFFED
PORK RECIPE
This
recipe will teach you how to make Stuffed Pork. It is a quick
and easy recipe to make. We
have the Stuffed Pork for our family Sunday lunch as
all our children and grandchildren come home to our place
on Sunday and I always like to make a special lunch. I cook
the Stuffed Pork and make roast potatoes, pumpkin and peas
to go with it. I also make up a lovely pork gravy. The stuffing
in this pork gives the Stuffed Pork a sensational taste.
Stuffed Pork Ingredients
lard
1 egg
1/2 tsp nutmeg
salt and pepper
4 oz bread crumbs
1 oz butter
melted
1 lemon
rind grated
3 Tbs
seedless raisins
1 stick
celery chopped
3 lb belly pork with skin
2 Tbs walnuts chopped
1 onion peeled and grated
Stuffed
Pork Method
Cut
the pork skin and remove the bone from the joint if you have
a good butcher he will do it for you.
Make the stuffing by mixing together remaining ingredients
except for the lard and season to taste. Flatten the meat
makeing sure the skin side is down then spread with the stuffing.
Roll the meat and stuffing up and secure it with a skewer
then put the joint in a roasting pan then brush the skin with
a little melted lard and sprinkle with salt. Roast the Stuffed
Pork for 30 minutes to the pound in a moderately hot oven.
Serve the Stuffed Pork with roast potatoes, pumpkin and peas
and with a great apple sauce or gravy.
