PORK PICNIC LOAF RECIPE

This recipe will teach you how to make Pork Picnic Loaf. It is a quick and easy recipe to make. I was very fortunate that my sister is 16 years older than me and she taught me how to cook and this was one of my favourite recipes she taught me to make. It tastes absolutely delicious and really looks good to especially when you slice it and see the egg through it.

Pork Picnic Loaf Ingredients

salt
1 onion
4 oz lard
4 oz ham
1 lb belly of pork
3 cups plain flour
1/4 pint hot water
4 hard boiled eggs
little milk for brushing
chicken stock cube made up with 1/2 pint water

Pork Picnic Loaf Method

The first thing is chop the onion finely and mince the pork and ham then mix these all together with the stock. In a large bowl sift flour and salt. Heat the lard and water until boiling then add flour and beat well until mixture forms a ball then separate one third and keep hot. Knead the rest lightly until smooth then shape into a greased 1 pound loaf tin and fill with half the meat mixture and place the eggs on top then cover with the rest of the mixture. Shape remaining dough to fit the top of the tin. Press the edges together and flute. Brush with milk and bake in the centre of oven for 1 hour. Serve the Pork Picnic Loaf cold with tomato salad.
