PRAWN
OMELETS RECIPE
This recipe
will teach you how to make Prawn Omelets. It is a quick and
easy recipe to make. I
really enjoy good Prawn Omelets. The combination of prawns,
shallots, bean sprouts, mushrooms, celery and salt and pepper
makes these omelets exceptional especially with the sauce
over the top.

Omelets Ingredients
oil
8 eggs
4 shallots
250g prawns
1 stick celery
salt and pepper
60g mushrooms
250g can bean sprouts
Sauce:
salt
1 tsp sugar
1 cup water
1 Tbs cornflour
2 tsp soy sauce
2 chicken stock cubes

Omelets Method
Sauce:
Blend cornflour and water
until smooth, add crumbled stock cubes, sugar, soy sauce and
salt. Stir until sauce boils and thickens. Put aside and keep
warm.
Put the eggs into a bowl with salt and pepper. Beat the eggs
until they are slightly frothy. In a pan heat a small amount
of oil. Saute gently finely chopped mushrooms for 1 minute
then remove them from the pan and drain and add to the eggs.
Add finely chopped shallots, finely choppd celery, shelled
and chopped prawns and well drained bean sprouts and mix well.
In a medium sized pan add enough oil to cover base when the
oil is hot pour omelet mixture into pan using cup to make
four omelets. When the mixture is firm on one side separate
omelets with a spatula. Turn over and cook the other side.
Stack on warm plate while cooking remainder of omelets. To
serve stack two of the Prawn Omelets on top of each other
and spoon the sauce over them.
