SATAY PRAWNS RECIPE

Satay Prawns.

This recipe will teach you how to make Satay Prawns. It is a quick and easy recipe to make. I first started eating prawns when I was young as my parents worked in a fish shop where the big prawning boats used to come in so prawns were one of our every day foods. Mum use to do them all different ways but my favourite recipe mum use to do was the Satay Prawns. The prawns covered in a mixture of peanut butter, soya sauce, chili sauce and red pepper then cooked tasted absolutely fantastic. All my family now eat Satay Prawns but we do not have them as often as I use to as prawns are expensive and I cook them as a special treat now.

Satay Prawns Ingredients

2 tsp chili sauce
1 Tbs soya sauce
1 medium red pepper sliced
1/4 cup crunchy peanut butter
1kg uncooked king prawns shelled

Satay Prawns Method

First thing you must do is clean the prawns so devein the prawns but leave the tail intact. In a microwave bowl combine the peanut butter and sauces then add the pepper and prawns and mix well till prawns are covered with the mixture well. Cover the bowl and cook on medium high for about 8 minutes or until prawns are tender making sure to stir occasionally. Serve the Satay Prawns with a dip.

PARMESAN MUSSELS RECIPE

Parmesan Mussels.

This recipe will teach you how to make Parmesan Mussels. It is a quick and easy recipe to make. My older sister and her family use to live on the coast and when we went there we use to go collecting mussels with her children and I use to sit and watch them just cook then and eat them but I could not do it as I thought they looked terrible. One day my brother in law decided to make the mussels special so he first cooked them in wine then he took the top half of the shell off and discarded it then brushed each one with combined oil, lemon rind and juice and garlic and then sprinkled them with parmesan and parsley then cooked them again. They looked so good and the smell was just really sensational that I had to try the Parmesan Mussels and oh boy were they absolutely delicious cooked this way really won me over and now I eat them with no hesitation.

Parmesan Mussels Ingredients

2 Tbs oil
1kg mussels
1 Tbs lemon juice
1 cup dry white wine
1 clove garlic crushed
1 tsp grated lemon rind
1 Tbs chopped fresh parsley
1/4 cup grated parmesan cheese

Parmesan Mussels Method

You must first clean the mussels good by removing the beards. In a large shallow microwave dish place the wine and cook on high for 4 minutes then add mussels and cover then cook on high for 4 minutes then remove the mussels as they open. Take the mussels out of the shells and get rid of one half of each shell. The shells you kept arrange them in a single layer on a flat dish then put the mussels back into the shells and brush each one with the combined oil, lemon rind and juice and garlic. Sprinkle the mussels with cheese and parsley then cook the Parmesan Mussels on high for 1 minute.
