SPICY PUMPKIN SOUP RECIPE

This recipe
will teach you how to make Spicy Pumpkin Soup. It is a quick
and easy recipe to make.
My husband really loves this soup as it is spicy but the children
in our family do not like it spicy so what I do is leave out
the coriander, cumin and chili powder and add 2 teaspoons
chopped parsley with the cream instead. I always make 2 pots
of soup up as I always make sure I cook the Spicy Pumpkin
Soup for my husband and then I make a pot of plain pumpkin
soup for the young ones. I serve this soup with hot crusty
bread and it is nice to have a great garden salad after the
Spicy Pumpkin Soup.
Spicy
Pumpkin Soup Ingredients
1 onion chopped
1 Tbs vegetable oil
1/2 tsp chili powder
90mls double cream
1 litre chicken stock
1/2 tsp ground cumin
1 clove garlic crushed
1 kg pumpkin chopped
1/2 tsp ground coriander
freshly ground black pepper

Pumpkin Soup Method
In a large saucepan add the
oil and heat over a medium heat then add the onions and cook
for 4 minutes or until onion is soft then add garlic, coriander,
cumin and chili powder and cook for 1 minute longer. Add pumpkin
and stock to the pan and bring to the boil then reduce heat
and simmer for 15 minutes or until the pumpkin is tender.
Take the saucepan off the heat and set it aside to cool slightly.
Place the pumpkin and cooking liquid in a blender in batches
and blend until smooth. Return the soup to a clean saucepan
and stir in the cream and season to taste with black pepper
and cook over a medium heat without boiling until heated.

TOMATO SOUP RECIPE
This
recipe will teach you how to make Chilled Tomato Soup. It
is a quick and easy recipe to make.
This is a real refreshing soup to make in the hot summer months.
My children did not like the Chilled Tomato Soup when I first
made it but then they came over one really hot day and dad
and I were eating some and they decided to join us and they
found out how refreshing and nourishing the Chilled Tomato
Soup was and now they are making it. The blend of onion, garlic,
vegetable stock, fresh mint, canned tomatoes, zucchini and
black pepper all goes into giving this soup a magnificent
taste.
Chilled Tomato Soup Ingredients
1 Tbs olive oil
1 onion chopped
2 zucchini grated
1 clove garlic crushed
1 litre vegetable stock
freshly ground black pepper
440g canned tomatoes drained
2 Tbs finely chopped fresh mint

Tomato Soup Method
In a large saucepan heat the
oil and cook the onion and garlic over a medium heat for 3
minutes or until onion is soft then add stock and mint and
bring to the boil then reduce heat and simmer for 5 minutes.
Put the tomatoes and stock into a blender and blend until
smooth then stir in the zucchinis and season to taste with
black pepper. Chill the Chilled Tomato Soup well before serving.
