RED ONION SOUP RECIPE

This recipe
will teach you how to make Red Onion Soup. It is a quick and
easy recipe to make.
Now have you ever made a Red Onion Soup well let me tell you
it has a wonderful combination of red onions, garlic, canned
beef consomme, red wine, brandy, bread stick, cheese and fresh
parsley that gives this soup a magnificent taste. It looks
really great as you put the bread with cheese in the plate
with grilled cheese on it then add the soup and the bread
and cheese rise to the top looks and taste sensational. What
makes this soup so wonderful is all in the slow cooking of
the onions and garlic.

Onion Soup Ingredients
2oz butter
2 Tbs flour
1 tsp sugar
1 Tbs brandy
1 Tbs olive oil
4 Tbs red wine
1 1/4 pint water
3 Tbs melted butter
12 cloves garlic peeled
4 large red onions sliced
8oz grated mature cheddar
1 Tbs chopped fresh parsley
2 x 14oz canned beef consomme
1 long bread stick cut into 12 slices

Soup Method
In a heavy based saucepan add
the butter and oil then heat and add the onions and garlic
and cook over low heat for 15 to 20 minutes or until the onions
are golden. Add the flour and cook stirring constantly until
flour turns a light golden colour then stir in the sugar,
consomme, water, wine and brandy. Bring to the boil then turn
heat down and simmer stirring occasionally for 30 minutes.
Using the melted butter spread both sides of the bread slices
then put them under the preheated grill and toast them on
one side only. Sprinkle untoasted side of bread with cheese
and return to grill until cheese melts. Into each soup bowl
place 2 servings of bread then put soup over the top of bread
and sprinkle the Red Onion Soup with parsley and serve immediately.

This
recipe will teach you how to make Potato and Brussels Sprouts
Soup. It is a quick and easy recipe to make.
One thing I really hated when I was young was when my mother
would make us eat brussels sprouts saying how good they were
for us. Then one winter she had made some lovely hot soup
for us and it was so good to taste and it warmed us up when
we came in from the cold. As I got older I asked my mother
how to make that soup and I was shocked when she told me it
was out of brussels sprouts my mother said she did not have
to listen to us all winge when she fed us the Potato and Brussels
Sprouts Soup and we still got our feed of brussels sprouts
that were so good for us.
Potato and Brussels Sprouts Soup Ingredients
125mls milk
1 litre chicken stock
2 large potatoes diced
2 Tbs chopped walnuts
freshly ground black pepper
250g brussels sprouts trimmed

and Brussels Sprouts Soup Method
In a large saucepan add the
brussels sprouts, potatoes and stock and bring to the boil
then reduce heat and cover and simmer for 25 minutes or until
potatoes are tender. Take the pan off the heat and set aside
to cool slightly. Place the vegetable mixture in a blender
and blend until smooth then return it to a clean pan and stir
in milk and season to taste with pepper. Cook over a low heat
stirring occasionally until soup has heated. Serve the Potato
and Brussels Sprouts Soup in soup bowls and sprinkle with
walnuts.
