RICE
CUSTARD RECIPE
This recipe
will teach you how to make Rice Custard. It is a quick and
easy recipe to make. This
is a great dessert to make when you and your husband are having
the family over as all the family will like this Rice Custard
from the youngest to the oldest in your family. This recipe
has gone through all the generations in my family as it was
always an ecconomical dessert to make.
Rice Custard
Ingredients
4 Tbs rice
20g butter
4 cups milk
1/4 cup sugar
ground cinnamon
3 eggs beaten lightly

Method
First thing to do is preheat
the oven to 140 degrees then coat a 1 1/2 litre casserole
dish with cooking spray. Place the rice, milk, eggs, sugar
and butter in the prepared casserole dish and gently stir
to combine then sprinkle with cinnamon. Bake the Rice Custard
in the oven for 1 1/2 hours or until the rice is soft and
the custard has set. Serve the Rice Custard with a dollop
of whipped cream.

PECAN
DATE BROWNIES RECIPE
This
recipe will teach you how to make Pecan Date Brownies. It
is a quick and easy recipe to make. You
may think this is just a cake but I have it as a dessert.
I buy some thick custard and cream to have with it or if you
prefer it is just as good with just a dollop of whipped cream
on top. I make this up for my children as they love the taste
of it and my grandchildren really enjoy it with custard.
Pecan Date Brownies Ingredients
60g pecans
4 egg whites
150g pitted dates
1/2 cup buttermilk
40g cocoa powder
1 tsp vanilla essence
1/2 cup brown sugar
1 cup self raising flour
1/2 cup canned pie apples
1/2 tsp bicarbonate of soda

Date Brownies Method
Preheat
oven to 190 degrees and then coat a 21cm x 28cm shallow cake
tin with cooking spray and line the base with baking paper.
In a medium bowl place the dates and cover with boiling water
and soak for 20 minutes and then drain. Place half the dates
in a separate bowl then add pecans and stir to combine. In
a separate bowl sift the flour, bicarbonate of soda and cocoa
then set aside. Put the remaining dates in a blender with
the apples, buttermilk and vanilla essence and blend until
smooth. Beat the egg whites until soft peaks form then gradually
beat in the sugar until it dissolves. Fold the egg whites
into the apple mixture then fold in the cocoa mixture until
just combined. Spoon the mixture into the prepared tin and
sprinkle with the dates and pecans and press slightly into
the mixture. Bake in the oven for 25 minutes or until cooked
when tested with a skewer. Allow the Pecan Date Brownies to
stand in the tin for 10 minutes before cutting into squares.
